Ingredients:
2 Tablespoons vegetable oil
1/2 cup chopped onion
1 cup chopped red bell peppers
1 clove garlic
1 pound ground turkey
1 (14.5 oz) cans peeled and diced tomatoes
1 (15 oz) can pure Pumpkin (the pie mix is a good variation as well)
1 (15 oz) can tomato sauce
1 (15.25 oz) can kidney beans, drained
1 (4 oz) can diced green chile (but fresh is better if you got ‘em)
1/2 cup whole kernel corn
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon groung black pepper
Directions:
1 - Heat oil in large sauce pan over medium-high heat. Add onion, bell pepper, and garlic: cook, stirring frequently, for 5-7 minutes or until tender. Add turkey; cook until browned. Drain.
2 - Add everything else on the ingredient list. Bring to a boil. Reduce heat to low. Cover; cook, stirring occasionally, for 30 minutes.
Enjoy the hell out of it, possibly with a poblano cornbread!
